Ranch Hand Mexican Pie
Enough prepared Mashed Potatoes for 4 servings
1 egg, slightly beaten
1/4 cup sliced green onions
1 pound ground beef
1/2 cup chopped onions
1 (8oz.)can tomato sauce
1/4 cup sliced ripe olives
2 to 3 tsp. chili powder (to taste)
1/4 tsp. salt
1/4 tsp. garlic powder
1 cup shredded Cheddar or Monterey Jack Cheese
Heat oven to 425 F. Grease 9" pie plate. Place mashed potatoes in a bowl; stir in egg and green onions. Spread and press potato mixture evenly against the bottom and side of pie plate. Bake 20 to 25 minutes or until light brown.
Cook ground beef and chopped onion in a 10-inch skillet, stirring occasionally, until beef is brown; drain thoroughly. Stir in remaining ingredients except cheese. Cover and cook over low heat 5 minutes, stirring occasionally. Spoon into shell; sprinkle with cheese. Bake 2 to 3 minutes or until cheese is melted. If desired, garnish with sour cream, green bell pepper, tomato and avocado.
